How to Make Fluffy American Pancakes
Step 1: Prepare the Dry Ingredients
Sift the flour, baking powder, salt and sugar into a large mixing bowl. This helps create light, airy pancakes.
Step 2: Make the Batter
Add the eggs to the dry mixture and begin whisking. Slowly pour in the milk while mixing until you have a smooth, lump-free batter. Avoid overmixing — this keeps the pancakes fluffy.
Step 3: Heat the Pan
Place a frying pan over low-medium heat and add a slice of butter. Once melted and lightly bubbling, the pan is ready.
Step 4: Cook the Pancakes
Ladle a dollop of batter into the pan. Cook for around 3 minutes, or until small bubbles start to appear on the surface.
Flip the pancake and cook for another 2 minutes until golden and cooked through.
Repeat until all the batter is used. (The batter can be stored in the fridge for up to 48 hours if needed.)
