🥖 Starter: Garlic Dough Balls with Flavoured Butter Dipping Tray

The perfect sharing starter — fluffy, warm dough balls served with a trio of our savoury butters for dipping.

You’ll need:

  • 50g salted butter

  • 300g bread flour

  • 7g yeast

  • 1 tbsp caster sugar

  • A selection of The Yorkshire Kitchen savoury butters (we recommend Garlic & Herb, Smoked Chipotle and Truffle)

Method:

  1. Warm 175ml water until steaming. Add salted butter and allow to cool until just warm.

  2. Mix flour, yeast, sugar and a pinch of salt in a bowl.

  3. Add the cooled butter mixture and combine into a soft dough.

  4. Knead for 10 minutes until smooth.

  5. Place in an oiled bowl, cover and leave to rise for 1–2 hours.

  6. Knock back the dough, shape into balls and leave to rise again for 30 minutes.

  7. Bake at 180°C (160 fan / gas 4) for 25–30 minutes until golden.

While baking, gently soften your flavoured butters. Serve warm dough balls with a dipping tray of melted Garlic & Herb Butter, smoky Chipotle Butter, and indulgent Truffle Butter.

🥩 Main Course: Steak with Creamy Peppercorn Sauce & Garlic Butter Tenderstem

A restaurant-quality steak dinner made simple with flavoured butter.

You’ll need:

  • 2 steaks (your preferred cut)

  • Tenderstem broccoli

  • 100ml double cream

  • The Yorkshire Kitchen Peppercorn Butter

  • The Yorkshire Kitchen Garlic & Herb Butter


Method:

  1. Remove steaks from the fridge 30 minutes before cooking.

  2. Heat a pan until smoking hot. Add oil, then sear steaks.

  3. Cook to your liking:

    • Rare: 1.5 mins each side

    • Medium: 2–2.5 mins

    • Well done: 3.5–4 mins

  4. In the final minute, add slices of Peppercorn Butter and baste the steak.

  5. Rest for 5–10 minutes.

To make the sauce:

  • Add more Peppercorn Butter to the pan.

  • Pour in cream and simmer to create a rich, creamy peppercorn sauce.

For the broccoli:

  • Melt Garlic & Herb Butter in a pan.

  • Toss Tenderstem, cover and cook for 5 minutes.

The butter does the seasoning, the sauce and the flavouring — all in one.

🌱 Vegetarian Main: Creamy Truffle Gnocchi

Creamy truffle gnocchi with sautéed mushrooms, finished with grated Parmesan and cracked black pepper.

You’ll need:

  • Fresh gnocchi

  • 250g mushrooms

  • 2 cloves garlic

  • 125ml white wine

  • 200ml double cream

  • The Yorkshire Kitchen Black Summer Truffle Butter

  • Parmesan

Method:

  1. Boil gnocchi until they float.

  2. Fry mushrooms, add garlic.

  3. Add wine and cream, simmer until reduced.

  4. Stir in a slice of Black Summer Truffle Butter.

  5. Toss with drained gnocchi.

  6. Finish with Parmesan and cracked black pepper.

Rich, earthy and irresistibly indulgent.

You’ll need:

  • 150ml amaretto
